Tzatziki
In 6 easy steps, make your own homemade Tzatsiki with Maleny Dairies Natural Yoghurt - no preservatives or additives, just fresh ingredients!

Just a note: it's important to remove the liquid from the cucumber as described below, to avoid your Tzatziki becoming too weak or runny.
Ingredients

500 g Maleny Dairies Natural Yoghurt

2 tbs extra virgin olive oil

2 cloves of garlic

1/2 large cucumber

Fresh dill - small bunch

Fresh mint sprigs

1 lemon

Optional: 1tsp dried mint

Method

Prepare the cucumber by slicing it in half long-ways and scrape out the seeds to remove the moisture. Grate the left-over cucumber.

Sit a sieve over a bowl and place the cucumber in the sieve to drain overnight. Stir occasionally and push liquid out with a spoon to help remove moisture.

Peel the garlic and finely grate, and mix with oil in a large bowl. Allow to sit for a couple of hours to mellow.

Spread out the drained, grated cucumber on a clean tea towel and pat dry. Then combine it with the garlic and oil mixture and stir through Maleny Dairies Natural Yoghurt until it is distributed evenly.

Add a squeeze of fresh lemon juice to the yoghurt mixture and add finely chopped mint and dill leaves. Fold through dried mint leaves as desired.
